FOOD SAFETY 2019

Scientific Sessions

Session on: Food Safety
Food Safety is a general term referred to reduce the risk of individuals becoming sick from foodborne illness through managed handling, preparation and storage of food. Each and every food establishment uses processes and sells food in different ways. The main aim of food safety is to prevent the food from contamination. It is essential for every individual to apply proper food safety principles.

Session on: Foodborne Diseases

Food borne illness or diseases are caused by the consumption of contaminated, adulterated, toxic or unhygienically produced food products. Food-borne diseases can be lethal. Almost 1 in 10 people fall ill per year (approximately 600 million) and 420,000 lives lost per year due to food-borne diseases out of which 30% are children below 5 years of age. In European regions, more than 23 million people fall ill from unsafe food per year out of which 3 million are less than 5 years of age and leads to a mortality rate of 5000.

Session on: Food Toxicology
Food toxicology is a branch of science which includes the nature, causes, effects and detection of toxic substances in the food Some of the major effects includes food allergy, food intolerance, food-borne diseases and infections. It can be caused by foreign food-borne pathogens, toxic chemicals or pesticides present in our food, chemical reactions due to the presence of some particular ingredient or improper handling during the production process. It is difficult to differentiate between food allergy and intolerance. Therefore, it is essential to practice good manufacturing practices (GMP) and cautious handling, labelling and preserving of each and every ingredient while preparing and producing of the food products. Consumers should be well aware of all the ingredients, their proportions, and the nutritious value of the product before consumption of the same. Food allergy is the major cause for the elevation in food safety throughout the world.

Session on: Genetically Modified Food
Genetically modified foods or Bio-engineered foods are food products induced with the genetic material of specific micro-organisms to obtain the desired characteristics in the food products. This process is done through various techniques of Genetic engineering and vector biology. There are various economical, ethical, political, social, environmental and health issues related to the use of Genetically modified food products in industrial scale. It is a controversial concern. Though it has the potential to bring massive change and enhancement in the food industry, but it has major safety issues related which cannot be neglected. Genetically modified crops are pest resistant, delayed in ripening, environmental stress tolerance, improved nutrition and taste.

Session on: Food Adulteration
Food adulteration is the process of adding other substances in the food products to enhance its quantity or appearance which may result in the deterioration of the quality of the products. Adulterants are the external substances mixed with the food products to increase its quantity. Adulterants are unsafe for human consumption.

Session on: Food Microbiology
Food Microbiology is the study of micro-organisms present in our food. Some of the microbes helps in the production of food products while others tend to contaminate them, thus causing food spoilage. The study of Food Microbiology is important because it affects the techniques used for food safety, food production and storage. Strains of Bacteria and yeast are used for food production techniques of products such as cheese, yogurt, wine, soy sauce and many more. Similarly, numerous strains of microbes can contaminate the food products if not preserved or stored in a sterile condition.

Session on: Water and Seafood Conservation
Oil spill is the accidental or intentional spillage of liquid petroleum into water bodies, thus affecting the aquatic ecosystem. Fisheries and aquaculture being one of the major sectors of food industries are largely affected by the pollution caused by oil spills. Polycyclic aromatic hydrocarbons released due to these oil spills pollutes the seafood consumed by us. The impact of an oil spill on the seafood industry depends on the intensity and the characteristics of the oil. It can further cause toxic algal blooms which can be poisonous for the fishes and also for the humans consuming them.

Session on: Dairy Hygiene and Its Maintenance
Milk and other dairy products are more susceptible to contamination. It is important for the dairy industries to implement required control measures to avoid such contamination during the production processes of the dairy products. Maintenance of the milking area, equipment, and personnel is very important. The services should be done in utmost clean environment. The storage and processing areas should be sterilized before and after use. The guidelines provided by the legislation should be strictly maintained and recorded.

Session on: Paediatric Nutrition and Food Safety

Paediatric nutrition is defined as the upkeep of a well-balance diet consisting of the essential nutrients and also the adequate caloric consumption that is needed to trigger evolution and withstand the physiological requirements at the various phases of a child’s growth. It conjointly includes nutritional necessities in infants and children. Because of deficiency of nutrition notably throughout the crucial ages of growth causes improper development of major illness, like anaemia, due to the deficiency of iron or scurvy due to lack of Vitamin C. Nutrition plays a crucial role in a childhood development process. Proper nutrition and food safety help in the appropriate growth and development of children allowing them to achieve their complete potential.

Researches on various risk assessment methods and components are going on though out the world. Development of such estimation procedures is essential to maintain a food standard and safety in food and beverage industry. Scientists are working throughout the world to develop techniques and methods which could improve the safety and standards of the food we are consuming. There are various tests which could detect and quantify the food additives, food adulterants and contaminants which deteriorates the food quality. Various unwanted compounds such as polycyclic aromatic hydrocarbons in seafood, trans-fats in oils and listeria in ice creams can be diagnosed.

Market Analysis

Market Analysis of the Global Food Consumption:

With the increasing population, the global food demand is also increasing day by day. Food is a basic amenity required by each and every one. With the elevation in the demand of food products, the maintenance in its quality seems to be ignored. By the year 2030, the global food demand is expected to rise by 35%. Though the leading companies are working hard to cope up with the rising demand with the use of modern technologies, it is difficult to maintain an equilibrium between the food quality and its price. We can witness that the consumption of food has consistently increased in a global level. The food and beverage industry are growing globally at a rate of 3.5% per year.

Market Analysis of Food Industry in Europe:

Europe is one of the leading estates for food production industries. In the preceding 10 years, Europe Food and Beverage industry have increased twofold thus achieving EUR 90 billion and contributing a positive residue of approximately EUR 30 billion. In spite of the commendable growth in the Food production industry, there are various hurdles being faced by them. Some of the major problems being:

- Transparency- It is very important to provide the entire information of the food products through proper labeling or promotion to encourage consumer awareness. People should be acquainted with the quality of the food they are consuming. Some of the facts which must be displayed with the products are the values of the nutrients present and the energy consumed by ingestion of the product.

- Lack of skilled workers- The lack of skilled labour in the industries of UK resulting due to Brexit act led to the lack of UK labour support which critically affected the Food and Beverage industries of Europe.

- Health quality vs price- The choice of our food products and habits depends on two basic entities- Food quality and Food price.

 Europe Food and Industry Figures:

Turnover- EUR 1,089 Billion (Largest manufacturing sector in Europe)

Value added- 1.8% (of EU gross value added)

Consumption- 14% (of household expenditure of food and beverage products)

            EUR 1,074 Billion

No. of companies- 289,000

Exports- EUR 98.1 Billion

Imports- EUR 72.9 Billion

Global exports- 17.8 % (EU food and beverage market share in global export)
